America's Egg Problem Is Getting Worse

Nearly 1.6 million dozen eggs have been recalled from Texas after being linked to a multistate Salmonella outbreak. At least 98 people have fallen ill across 17 states, 26 have been hospitalized, and the US egg industry is once again facing questions about food safety, production costs and how the country handles one of its most basic foods.

Eggs have long been treated as one of the simplest foods in the American kitchen. They were cheap, versatile and deeply embedded in the American diet. They appear on breakfast plates, inside baked goods, in restaurants, hospitals, schools and food-processing facilities. But behind that ordinary carton is a remarkably complicated food-safety system.

An egg can look perfectly clean and completely normal while carrying Salmonella Enteritidis. That reality has now returned to the center of America's food-safety debate.

In July 2026, Midwest Poultry Services recalled 1,589,577 dozen eggs, or approximately 19.1 million individual eggs, produced at its Texas farms. The eggs included white shell eggs and brown cage-free eggs produced between 6 June and 3 July 2026. They were distributed to retailers and food-service customers across Texas, Oklahoma, Louisiana and other Southern states.

The recall was subsequently elevated by the US Food and Drug Administration to a Class I recall, the agency's highest risk classification. The FDA uses that classification when there is a reasonable probability that consuming or being exposed to the product could cause serious adverse health consequences or death.

By 24 July, the outbreak associated with the eggs had sickened 98 people in 17 states, with 26 hospitalizations reported. Illnesses stretched from November 2025 through August 2026. No deaths had been reported.

Those numbers are serious enough on their own. But the story is larger than one farm, one recall or one contaminated batch.

It exposes the extraordinary vulnerability of the modern American egg supply chain and raises uncomfortable questions about whether a system designed to make eggs safer can sometimes create new vulnerabilities that must then be controlled through refrigeration, sanitation, testing, regulation and consumer behavior.

The scale of the Texas recall is difficult to comprehend when expressed only as cartons. Nearly 1.6 million dozen sounds like a large supermarket promotion. In reality, it represents almost 19.1 million eggs. Those eggs did not remain at one farm. They entered a distribution network connecting producers, distributors, supermarkets, restaurants and food-service operations across several states.

The FDA says the recalled eggs were sold through retailers including Kroger and Brookshire Grocery locations, among other smaller outlets. The products carried sell-by or best-by dates extending as late as 27 August 2026, meaning potentially affected eggs could remain in consumers' refrigerators well after the original recall.

The situation became even more concerning because the illnesses were not confined to Texas. The CDC identified cases across 17 states. That is an important characteristic of modern foodborne illness outbreaks. A contaminated product no longer has to remain close to the farm where it was produced. A single producer can distribute food across enormous geographical areas within days. A contamination event at one facility can consequently become a national or multistate public-health problem.

And eggs are particularly important because they are eaten in so many forms. They are fried, scrambled, boiled and poached. They are incorporated into mayonnaise, sauces, desserts and baked products. They are used by restaurants and institutional kitchens in quantities that ordinary consumers never see. The more complicated the distribution chain becomes, the more difficult it can be to identify every destination of a contaminated product.

This is where the discussion becomes more complicated than simply saying that eggs are "dirty." Salmonella can contaminate an egg in more than one way. One route is external contamination. Bacteria can be present in the environment surrounding chickens, including areas contaminated by animal faces. The shell itself is porous, containing thousands of microscopic pores.

But another route is particularly important. Certain strains of Salmonella, including Salmonella Enteritidis, can infect laying hens and contaminate eggs before the shell is formed or as the egg is developing inside the bird. That means an egg can arrive at a processing facility looking completely clean while still carrying a foodborne pathogen.

The US Department of Agriculture explicitly warns that even clean, unbroken and fresh shell eggs can contain Salmonella Enteritidis. This is why simply looking at an egg tells a consumer very little. There is no smell that reliably announces Salmonella. There is no visible stain that necessarily identifies it.

And there is no guarantee that a clean-looking shell is a safe shell.

One of the biggest differences between the American egg system and the system used in many countries is what happens to the egg after it leaves the chicken.

In the United States, commercially processed eggs are washed and sanitized before reaching consumers. That practice exists for a reason. Washing removes dirt, manure and microorganisms from the shell. Sanitation is intended to reduce contamination and improve food safety. But there is a trade-off.

When a hen lays an egg, the shell is naturally coated with a thin protective layer called the cuticle, sometimes referred to as the bloom. The cuticle acts as part of the egg's natural defense system. Research and USDA material describe it as a protective barrier that helps prevent bacteria from penetrating the shell. When commercial eggs are washed, that natural barrier is removed or disrupted.

The United States therefore compensates by controlling the egg in other ways, particularly through refrigeration and sanitation. This is the crucial point that often gets lost in the debate. It would be misleading to say: "America washes eggs, therefore American eggs get Salmonella."

The evidence does not support such a simple conclusion. The purpose of washing is to reduce contamination on the outside of the shell. The more accurate argument is that washing removes a natural protective barrier, meaning the American system must rely much more heavily on subsequent controls. Which, 95% of eggs farmed, washed and sanitized are not stored in a controlled area.

This question has become increasingly popular whenever an American egg recall makes international headlines. In countries where eggs are generally sold unwashed, the natural cuticle remains intact. Refrigeration practices can therefore differ. In the United States, however, commercial washing became part of the established food-safety system.

The advantage is obvious: consumers receive eggs that have been cleaned of visible contamination and much of the bacteria present on the outside of the shell. The disadvantage is equally important: once the protective cuticle has been removed, the egg becomes dependent on the rest of the system working properly. That means the American system cannot afford major failures elsewhere.

If a flock becomes infected, if environmental contamination is not detected quickly enough, if processing controls fail, or if contaminated eggs move through distribution before the problem is discovered, millions of eggs can suddenly become part of a public-health investigation. The shell may be clean. The carton may be clean. The supermarket refrigerator may be clean. And the egg can still contain Salmonella simply because the natural shell coat was removed.

Food safety does not start at the supermarket. It begins with the flock. A laying operation must manage the health of its birds, their feed, water, housing, pest exposure, sanitation and surrounding environment. Salmonella can circulate in poultry environments without necessarily producing obvious signs of disease in the birds themselves.

That makes monitoring essential. In the Texas case, Midwest Poultry Services said the contamination problem was identified through environmental monitoring and root-cause analysis. The company stopped distributing fresh eggs from the affected Texas farms while the investigation proceeded. That is an important part of the story.

The contamination was not discovered because consumers could look at an egg and identify something wrong. It was detected through a system designed to find a problem that consumers cannot see.

The Salmonella recall is arriving at an especially difficult time for American egg producers. The US egg industry has spent years dealing with major disruptions, particularly highly pathogenic avian influenza, commonly known as bird flu. Large numbers of laying hens have been lost or depopulated during outbreaks, reducing egg supplies and sending prices sharply higher.

Consumers felt that crisis directly. Eggs became one of the most visible symbols of American food inflation. But as flocks recovered and production increased, another problem emerged. The same industry that had struggled to produce enough eggs suddenly faced the possibility of having too many eggs relative to demand.

That is a devastating economic situation for producers. Consumers may celebrate falling supermarket prices. Farmers do not necessarily experience those falling prices as good news. A cheaper carton can mean a narrower margin — or a loss — for the producer.

This creates a difficult economic equation. A farm has to feed its birds. It has to pay workers. It has to maintain buildings. It has to purchase electricity, water, equipment and fuel. It must manage waste. It must comply with food-safety regulations. It has to monitor its birds and environment. It must transport eggs. And it must absorb unexpected losses.

At the same time, the market determines how much a producer receives for the finished product. When egg prices are high, consumers complain. When prices collapse, farmers can struggle to cover production costs. The result is an uncomfortable contradiction: Consumers need eggs to become affordable again, while farmers need prices high enough to remain economically viable.

That tension becomes even more serious during a food-safety crisis. A recall does not merely remove eggs from supermarket shelves. It destroys inventory. It interrupts distribution. It creates testing and investigation costs. It can damage contracts and relationships with retailers. And it can leave producers with eggs they are no longer able to sell as ordinary fresh shell eggs. The FDA says Midwest Poultry Services halted distribution from the affected Texas farms after the contamination was identified.

This is where the broader economic debate becomes important. There is a temptation, particularly during a period of falling commodity prices, to ask whether farmers and food companies can continue reducing costs without eventually compromising something important. But it would also be wrong to claim, without evidence, that the Texas outbreak happened because the farm "cut corners."

The available investigation does not establish that. In fact, the company's environmental monitoring helped identify the problem. What can reasonably be said is that financial pressure makes food-safety management an increasingly important issue. Food safety costs money. Testing costs money. Cleaning costs money. Maintenance costs money. Biosecurity costs money. Staff training costs money.

Keeping birds separated from potential contamination sources costs money. Replacing equipment costs money. And stopping production when something is wrong can cost enormous amounts of money. A healthy food system therefore depends on producers having enough economic room to maintain these safeguards. The cheapest possible egg is not necessarily the safest possible egg.

The American egg crisis has therefore entered an unusual phase. For years, consumers complained that eggs were too expensive. Now, some farmers are facing the opposite problem: prices can fall below economically sustainable levels. That does not necessarily mean consumers will see permanently cheap eggs. Agricultural markets are cyclical. Bird flu can reduce production. Disease can force depopulation. Feed prices can rise. Demand can change. Processing capacity can tighten. Transportation costs can increase. And recalls can suddenly remove millions of eggs from circulation.

A market can therefore move from shortage to surplus and back again surprisingly quickly. The consumer sees the price on the supermarket shelf. The farmer sees an entirely different economic reality.

The FDA has plans to recall more than 50 million more dozen of eggs. American food shortage continues.
